Strawberry Mousse

Ingredientsfor six servings

  • Kanten flakes2 teaspoons (4g)
  • Water1 cup (200 ml)
  • Kudzu2 tablespoons (6g)
  • Organic Amazake1/2 cup (100 ml)
  • Water1/2 cup (100 ml)
  • Strawberry300g
  • Lemon juice1 tablespoon
  • Maple syrup1 tablespoon

Directions

  1. Mix Organic Amazake with 1/2 cup of water. Dissolve Kuzu in 2 tbs of water well.
  2. Pour 1 cup of water into a pan and sprinkle with Kanten and soak for 30 minutes. Cook over medium heat stirring well, until Kanten is completely dissolved. Add Kuzu and Amazake and stir till thickened. Remove the pan from the heat.
  3. Leave some strawberries for decoration.
  4. Hull the rest of strawberries and put them in a blender together with lemon juice, maple syrup, and 2. and process until smooth.
  5. Wet small dessert cups, pour 4. and chill in the fridge. Place cut strawberry to garnish.
